Waco, Texas (KWTX) — Downtown Copperas Cove’s economy is flourishing, largely due to a local duo reinvesting in their community.

Andy Remedios and Betina Cash purchased the dilapidated Cove Theatre in 2021.

Following that, they've started a diner, introduced a boutique, and are currently gearing up for further expansion.

As you travel through downtown Copperas Cove, you'll likely notice for-sale signs on vacant structures. However, the pair aims to alter this situation.

Remedies mentioned, "That sense of nostalgia and the quaint town vibe are absent these days." They also noted, "In the over two decades since our high school graduation, Copperas Cove has experienced significant expansion."

The pair, both of whom hail from Copperas Cove, mentioned they're leveraging their individual talents and backgrounds to revitalize the hometown they cherish.

Four years back, they bought the dilapidated Cove Theatre, transforming it into a venue for both films and live performances. Two years after acquiring the theater, they launched Herb and Ernie’s Family Diner. Additionally, within the same space, there operates a shop with more than 50 local sellers.

Remedies mentioned it's fulfilling to serve as a steadfast support within the community.

I believe towns lack that personal touch nowadays," he remarked. "It's nice to be able to say, 'Go chat with Andy over at Herb and Ernie’s.'

Now, the pair is preparing to grow their family once more.

"We're planning to include a clothing area, which I assume will likely be set up here so they can easily change their outfits," explained Remedios as she indicated within the boutique.

Cash mentioned that as the shop within the diner is becoming short on space, they bought the neighboring building to launch Main Street Mercantile, a classic general store.

Local sellers will have the option to pay the proprietors for the chance to showcase their brands within the boutique.

Downtown areas require retail as well," Remedies stated. "Therefore, when people are dining, or post-meal, or even after grabbing a drink, they have an opportunity to do some shopping too. Our aim was not only to create a retail space but one that would attract a broad spectrum of visitors. We're aiming to capture that cozy hometown vibe, where folks could stop by for a quaint memento from Copperas Cove.

The job is tiring, the pair acknowledges, yet they believe it's worthwhile to contribute to boosting commerce and morale in their community.
